Spring May Be Sprung

So much for the Weather Network and their forecast of a late spring.The crows were calling yesterday for the first time which is sure sign that spring is on the way.We are busy tapping and will finish our home bush with 4000 taps today. Another 3000 to go at our Clayton bush. The sap was running a bit yesterday and by Wednesday and Thursday we should have the first run. Its always a challenge getting started up each year with six pumps in the bush that have to work properly, the reverse osmosis machine to set up   and the evaporator to connect and give a final rinse. That’s why the first taste of fresh syrup each spring is so rewarding. Watch our blog this week about when we open the camp for visitors.
