In the old sugar shanty where we first made syrup from 1973 to 1990 we have installed a small wood fired evaporator. It is very similar to our original evaporator which was much larger, 5 feet wide and 14 feet long compared to 2 feet by 6 feet.
Even small children can peer into the small evaporator and get a good appreciation of the process. The open pans let the steam drift up through the roof vent and provides one of the most delightful smells of the spring season.
