The temperature reached +5 degrees C today and sap began to run. The first day is always a bit stressful as there are three vacuum pumps and four sap transfer pumps to get started. Fortunately everything is working and we expect to have enough sap to boil for the first time tomorrow.
The next step is to start the reverse osmosis machine and then the evaporator.
The weather looks favourable for the rest of the week so the season has officially started. The Kettle Boys and Shanty Men are planning to be here Saturday and Sunday and we should have fresh syrup to taste.
